Executive Chef Michael LeClerc of 350 Main Brasserie will be stepping down from his position Monday, Sept. 17 after more than 12 years spent with the restaurant. LeClerc announced his decision to resign in an email sent to friends, patrons and suppliers this week, informing them of his decision.
LeClerc has worked in Geneva, Thailand, Maui, New York City and in Paris at Joel Robuchon's Jamin before settling down in Park City. He has been in Park City for the past 25 years, starting out as a chef at the Stein Eriksen Lodge. In his role at 350 Main Brasserie, he introduced healthy cuisine as a major component of his menu offering a vitamin- and antioxidant-rich, low-fat, low-calorie "Sante" menu.
350 Main Brasserie has not yet found a replacement for LeClerc and general manager Josh Cowart said that the nationwide search will begin soon. Over the winter season, the restaurant plans to keep LeClerc's menu and hopes to find an executive chef with the same passion for healthy cooking, Cowart added.
"The great team he built is still on board," he said. "And we are going to look for someone from the outside, locally or nationally, that embodies his dedication to healthy cuisine and serving great food."
With plans to spend the next few months in France and Italy, LeClerc said he hopes to return to Park City to start a new business, ConGusto Cuisine.
"I plan on doing private chef work, menu planning, recipes and videos," LeClerc. "It will be an interactive healthy cuisine company that will help people cook great, fabulous food that is also good for you. It can be done."
LeClerc will continue to work on a consulting basis for the restaurant.
