Good food is par for the course

When diners can eat a hot dog on the patio and golfers can buy a hamburger between their second and third shots on the 8th hole, Bandanas must be doing the cooking.
Located on the Park City Municipal Golf Course and at Hotel Park City, Bandanas Bar and Grill offers golfers the chance to get food and a drink anywhere on the course, while maintaining a traditional sit-down feel for onlookers back at the clubhouse.
"You can actually sit out on the practice playing green and have lunch," said Craig Davis, the food and beverage director for Hotel Park City and all its establishments.
"We also have two carts that service the golf course and the carts pretty much mirror the menu we have back at the restaurant."
That menu not only includes hot dogs and hamburgers, but also pizza, salads, steak, fish, beer and other beverages, as well as snack foods such as potato chips. The hot dogs are all beef, the hamburgers are cooked over hard-wood mesquite, and the pizza is sold by the slice and by the pie.
"I dare you to come out and have a burger and tell me it’s not the best in town," Davis said.

Davis became the food and beverage director of Hotel Park City’s catering, as well as The Sleigh, Coasters Private Club for Members and Bandanas three months ago, and didn’t waste time before making improvements.
"When we took it over it was a pretty unfriendly eating establishment," he said. "It was tacky. We came in and bought things like widescreen TVs and cool neon signs. It’s an upscale mini-clubhouse that’s on the golf course, but we also have just about anything you can think of that you might be jonesing for out on the golf course and it’s all very affordable."
On the course, a hot dog is $1.50 and a burger is $2, and food is served from 7 a.m. to when the course closes at dusk.
"We’ve made huge strides in that grill, as well as all the outlets," he said. "Before we came it was so mismanaged. There was no well-thought out concept to any of the restaurants. One of the first things we did is weave a common thread into the menu. Everything is great American food."
Although the Grill is on a golf course, Davis said it is set up to please anyone who walks in, with or without clubs.
"We get a lot of locals who want to eat on a patio but get away from the traffic noise. It’s a good place to be," he said. "It has the potential of being a really great spot for everything from business meetings to a mom bring her kids down for a hot dog."
Davis would know. With 40 years of experience in the food service industry, including time as a food and beverage director in Jackson Hole, Wyo., a private restaurant owner in California and being certified as a chef, Davis has just about seen it all.
But he’s also smart enough to realize it’s not about him.
"Yeah, I have a 40-year food background," he said, "but it’s not so much about me as it is about the young people working here and the philosophy we have."
Adam Heaton, along with brothers Darin and Dallas Heckel, are three of the young minds who have helped mold Bandanas into a successful grill. Heaton is the outlet manager, while Darin is the assistant food and beverage director and Dallas manages Bandanas.
"I oversee the manager who runs it, who’s my brother," Darin said. "He’s taller and prettier. He got the good genes. As brothers can be, it’s a lot of fun. He puts up with my crap. We work hard together."
