Pizza now thrown in Coalville

East Side residents apparently like take-and-bake pizza. The McCluskeys opened Vic’s at 54 North Main Street in Kamas last May and had so many customers drive down from Coalville they took over the vacated Huddle Café space and as of last week operate on Main Street of that community too.

Vickie McClusky, who co-owns Vic’s with her husband, and whose mother makes the dough, has recruited her sister Andra Hammond to manage the new location.

With the Huddle gone, there are only two other restaurants in Coalville so McClusky said her lunch offerings are in demand. Even though take-and-bake pizzerias don’t usually have ovens, the family cooks a few things to serve at lunch time from 11 to 2 p.m.. Their personal-pan pizzas and pizza sandwiches have a monopoly on Italian-American fare in Coalville. Throw in breadsticks and soup and McClusky said she’s had a warm welcome.

Kamas has more lunch-time options than Coalville, so the second location is on schedule to outpace the original. She said low prices are the key to her success. The pan pizza or sub with a drink is sold for under $5.

"People are really excited; they’re ready for something new, something different," she said.

Hammond moved to town a few months ago from Alaska and inherited her mother’s baking prowess. She occasionally takes breaks from the Coalville store to make wedding cakes and dessert cakes as a side business.

The customer base in Coalville was loyal from the beginning, McClusky said. She’d actually been looking for a space for a few months before the one on Main Street became available.

Once road construction is done and trees are planted, she plans to set lunch tables outside and embrace the neighborhood. For right now, however, she rules out the possibility of becoming a dinner sit-down restaurant because of limited seating.

A year ago the McCluskys ran a construction firm and a women’s gym. She said the transition to becoming restaurateurs has been a hectic one.

"We’ve had to rely on friends and family to help with our kids," she said. "It’s been quite a change."

But she said it’s a fun industry and she loves interacting with clients.

"It’s a very upbeat job people like to eat," she added.

Vic’s Take-and-Bake Pizza in Coalville is open 11 a.m. to 8 p.m. Monday through Saturday. They welcome people to call ahead at 435-336-4466 or to just drop by.
