Summit Beef now available through special orders

Whole or half animals will be delivered in the autumn

People bought the Summit County beef available at The Park City Market last week, but the logistics of getting meat from local cows into local stores is so complicated the next step will be "direct-to-consumer" purchasing, explained a press release from the Summit County Food Coalition.

A single animal was made available for purchase at the grocery store as part of "pre-pilot" program. The initial hope was to have more beef available in the autumn for a "pilot" program.

Beef will still be available, but not through the Park City Market, explained Utah Department of Agriculture marketing director Seth Winterton.

Starting this week, consumers can order a full animal for $1,600 or half for $800. Buyers will be notified of where to pick up their delivery in the fall. It will either be from Blazzard Farms in Kamas or Half Circle Cross Ranch near Coalville.

Even though there’s likely sufficient demand to stock Summit County beef in local grocery stores year-round, it’s currently a seasonal industry in this area, Winterton explained.

Due to the short growing season, local ranchers can only provide enough grass to feed calves during the summer. They’re born in the spring and then shipped to stockyards in the fall. It takes significant planning to provide food for animals year round to be harvested for consumption year round.

That’s why direct ordering makes the most sense right now, he said. A full animal provides enough beef to fill 12 to 13 cubic feet of freezer space.

All orders will be delivered frozen, wrapped in butcher paper and labeled, the press release explained.

The coalition will continue its efforts to make the product available in stores in the future, Winterton said.

Orders are being taken online at http://www.summitcountybeef.com or at 435-503-4179. Delivery time is estimated to be late October or early November. Credit cards and local checks will be accepted.

The beef is USDA inspected and raised without antibiotics. Cuts include tenderloin, rib eye steak, sirloin steak, T- bone steak, sirloin tip roast, chuck roast, rump roast, top round steak, cube steak, short ribs, soup bones, ground beef and/or stew meat.

According to the press release, consumers will have some flexibility in choosing specific cuts and will be contacted in September regarding requests.
