Yama Sushi newest in Montage dining

Montage Deer Valley added a new restaurant this season, making it one of four dining options the resort hopes guests and locals will enjoy. Yama Sushi, a gourmet sushi bar, offers classics like the salmon roll but also plays off the local surroundings with rolls like the Wasatch and Empire rolls. The word Yama even means mountain in Japanese.

"Yama Sushi is our new concept, the newest dining venue," said Tim Flowers, the director of food and beverage at Montage, " and it create more of a dining destination (at the resort.)"

The head chef of Montage Deer Valley spent several years abroad, in Hong Kong, Singapore and the Maldives where he fine-tuned his Asian cooking style. The head sushi chef brought a concept from a resort in Jackson Hole to the Montage, helping create the signature rolls and signature sashimi.

But Yama Sushi is just one of the options at Montage.

"It’s a beautiful drive coming up here," Flowers said. "You’re greeted with a warm welcome and there’s a variety of options to dine here."

The head chef of the resort wanted the new restaurant to play off of the adjacent Vista Lounge, which specializes in Asian-style small plates and specialty cocktails. Guests walk into the 10,000 square foot space, complete with vaulted ceilings, chandeliers, dark woods, bright walls and hard wood floors. The massive lounge tucks intimate spaces in with huddled seating for friends and families to use, while live music plays in the background.

"It’s the living room of the resort," Flowers said. "You can enjoy the views or meet up with friends and family."

And the views are sprawling, with a 180-degree vista to admire from the mountain where the resort is nestled. Large terraces offer another space for lounging guests to wander into.

"It’s really just a great place to come before or after dinner," Flowers added, "a place where you can enjoy the live entertainment or just relax."

The resort’s "signature restaurant," Apex, offers breakfast, lunch and dinner to guests, including the seasonal skier’s buffet which draws in Deer Valley skiers on a regular basis.

"I would say Apex serves a ‘Classic Mountain American’ style of fare," Flowers said. "Our patio is great for winter on those bluebird ski days and in summer I would say 75 percent of dining happens out on the patio."

Popular dishes at Apex include chicken schnitzel, fondues and homemade popovers, with as many ingredients as possible locally sourced, from the bison steaks to cheeses.

Daly’s Pub and Rec serves those looking for a more casual, kid-friendly atmosphere. It serves gastro-pub favorites all of which are made fresh from scratch with tried and true classics such as fish and chips and shepherd’s pie. Perhaps a bit more gourmet, the pub also offers wood-fire pizzas.

"The pub has some great amenities for our guests, but for locals too," Flowers said. "I’d put it up against any other pub."

Inside, it has four bowling lanes, a Wii Lounge, arcade classics, flat screens for sports fans and two pool tables.

"Between the games and the food, it has something for everyone," Flowers said. "It has this very fun, very lively atmosphere."

All four restaurants serve up the resort’s custom beers, the Montage Mountain Ale which is also used to batter fish, fries and onion rings and the Montey’s Belgium White Ale. Both resort guests and visitors can use the free valet service.

"The experience has to tie in to the service and presentation," Flowers said. "There are great restaurants on Main Street, but this is an opportunity to experience a luxury hotel at 8,400 feet high. We want it to be about the experience."
